I want to do one this year for xmas day for dinner round my mums, i did the turkey last year.
Just wondering on times, is it an over night cook or is it just a case of an early start, i have young kids so no doubt will be up early. I'd like to serve it warm so would rather take it off the smoker and take it to my parents to be served within the hour or so, i take it i can wrap it in foil and keep it in the cool box to keep it warm for an hour or so. Does it reheat ok or would the glaze be ruined? Could i even smoke it xmas eve then back on the smoker xmas morning to put the glaze on and heat it through.
Any help would be great. Slatts

Hello chap, Did an gammon last year and even if I say so myself it was top o the range. Cooked it on the smoker with a fair fat cap and rub and then let it cool.
My glaze was done in the oven as an warm through as well, all the lovely smokey flavour was there and none of the smoker style vagaries when the pressure was properly on.
I know some may consider this not the purists way but it did the job.

Great advice as always. Might just smoke it the day before and get the glaze on in the oven at my parents if there will be room in the oven. Might have to glaze it here if not but thats not a problem.
Just looking at glazes, want a sweet one so might go for the maple syrup and pineapple classic.
Got to use real Coke - do not accept substitutes (particularly if they have artificial sweeteners in them).
Never tried in smoker - but in the pot/oven it is great.

Thanks for all the replies.
It seems the oven way of cooking them is just as good as anything else, I'm doing the turkey on the smoker so might give the ham a miss this year as the wife has just informed me she doesn't even like ham
I might try one in the new year once we're back from our holiday.
