Fatty - a first atempt

Never done one before but been reading about them as I want to do something like this instead of stuffing at Christmas.

First experiment is with mushrooms, shallot , Swiss cheese and mozzarella. I also used a bit of Desert Dust rub inside and Sweet Money on the outside.

Made the lattice and wrapped the lot up and it will go on in 20 mins so will be interesting to see how this turns out.

I may have gone a bit overboard on the size but live and learn.

2hrs in at 250f - looking good. I was thinking of basting in 30-60 mins but will test internal temp in 30.

Done and delicious (lowered it over the coals quickly in an attempt to crisp up the bacon) - will definitely be doing this again and experimenting with favours.

Looks good, I'm wanting to try one of these....looking forward to seeing how it turns out.

what's in the white packet next to the Cheese, would that be sausage meat ?

It is I just picked the first one I saw at Sainsburys on my way home.

Hi Conor

Whatever you do dont do pepperoni and chorizo together in a fatty, way to oily and the flavours didnt work. In fact the wife looked at me with digust after trying it lol.
Ive done a couple since, chilli cheese and chicken worked well.

Your one looked good though although i hate mushrooms

You're not allowed to hate mushrooms...things of beauty, at least the ones that don't kill you.

Looks great, Not the best thing to see first thing in the Morning once you have got up......now feeling really hungry for some Bacon :D

did you baste with the juices that came off, as I can see your drip tray, what was the duration of the cook and what internal temp did you get to.

Basted with a bbq/apple juice mix. Cooked for about 4 hours at 250f in the end with the internal temp hitting 175f before I took it off. Prob could have taken it off earlier but this was my first attempt and I wanted to make sure.
