Oh hell yeah, been planning it since I did mine last year and a bit annoyed with myself for limiting this to a once a year event to be honest. I followed the recipe from the virtual bullet website http://virtualweberbullet.com/turkey6.html with a few tweaks and it was awesome.

Out of interest does anyone ever get turkey drumsticks at their butchers?

I did a trial run ready for Christmas on Sunday just gone. Did a turkey crown and a full bird and was really impressed.

Brined them both in buttermilk with salt, sugar, cinnamon stick and fresh chilli for 48 hrs. Washed it off the buttermilk injected with a chicken stock/melted butter solution and rubbed with a standard rub. Put them on the ProQ smoker for 3.5hrs with a little wood for smoke flavour.

Turned out great for a first run and has given me the confidence to do the same on Christmas day.

Planning to do mine on Christmas eve, just to make sure I don't get caught out. Won't bother with brining, but will be injecting with butter & stock mix.

Did a trial run a few weeks ago on an Aldi tiurkey & it was lovely.

I thought about doing that but then read a post saying you Ned to leave the cavity (Ooo Errr) clear so that smoke can get inside and works it's magic. The can blocks the airway apparently.

Everyone has a different style but that did seem to make sense.

Not sure on it blocking the cavity, sounds like a bit of a myth to me, but to be honest for Christmas Turkey smoke flavour isn't as important for my family, in fact I'm banned from adding any wood, charcoal only on Christmas day ;)

Hi

JEC a question or 2 if you dont mind, when you do the turkey beer can style what temp and how long do you go??
Do you still inject with butter and do you dry rub the skin?
Think i might just squeeze a bit of wood down the side of the can just to let a bit of smoke in just in case.

Many thanks
