Wings, Ribs and Fireworks

Nice(ish) day so decided to get some wings, drum sticks and ribs ready for the firework display later (just going to be blowing stuff up in my back garden :D :D ).

I have a bunch of new rubs to try as well so went with racks of baby backs (one with Desert Gold and one with a Spicey Cherry Rub);

You can see from straight after applying the rub that the Cherry rub is obviously drier (not sure if it has more salt as well) but the Desert Gold remained pretty dry even after 45mins of sitting in the rub;

Smoking them over hickory at 250f

For the wings I separated them into the lower and upper elements with the lower piece getting the Sweet Money rub (which I put on a pork belly in the oven the other day and was lovely) and the upper pieces getting the Bacon Jalapeno rub;

They will go on later with some drum sticks which also have the Sweet Money Rub.

2 hours in and time to wrap the ribs. The Desert Gold is still pretty light in colour with a good bark forming. The Cherry rub has taken on an awesome colour and excellent back as well.

The Cherry rub has obviously bound far better that the Desert Gold (which can still be seen sitting on top of the ribs.

Drum sticks are now on and upper wings pieces will follow shortly.(sorry for the blurry pic)

Ribs came off after 1.5(ish)hrs and the cook was perfect but the Cherry rub was awesome and will be used again. Excellent flavour from both of the rubs but the cherry one really stood out with a fruity and spicy flavour and the moisture from the meat with the rub almost made their own sauce.

Wings and legs came out great and the bacon Jalapeno was a hit (loved the spice hit at the end);

I dropped the grill down over the coals for 2 mins at the end to get a quick crust on the wings but they could have been eaten straight from the WSM without that.

I should be able to smell that lot from here :)

Smoked a "practise" small turkey this morning. No Heatermeter this time, just used lumpwood and let the WSM go with all vents fully open.

Just about to carve :)

Just moved them in PB so should be able to see them now.

Nice, great looking pics and now I'm hungry! We did pulled pork for our fireworks party - cooked the day before, which made party time so much easier!

Also are you on Twitter?
Have you tried the new butchers in Wokingham? Stefan's Butchers. I spoke to the main guy Christian and he seems clued up on the BBQ cuts and can supply unrolled brisket, baby backs and Spares.

Rubs - from SAYSAUSAGES.com shop (thanks Toby)
Twitter - yup but a spectator only and so that I could get Ribstock tickets
Butcher - not yet but only out of loyalty to the butcher in Hurst who now emails me when he when he gets in good cuts. I will pop in tomorrow and have a chat with them (working from home :D )
Have you bought anything from them - specifically the baby backs and brisket as these seem to be the hardest to get of any quality locally.

Thanks, haven't ordered any ribs from the butchers yet but will let you know. Sounds like you got a good relationship with the Hurst butchers, always a good thing.
