Looking for suggestions for next trial

Firstly apologies. Haven't been on the forum for quite a while (been busy moving house and snowed under at work).

Whilst I have been away I have treated myself to a brand new WSM 57 whilst they are discounted (something I planned to do once moved into new place)

Have trialled 3 racks of supermarket loin ribs with 2 chunks of hickory, cooked for around 3 and 1/2 hours in the smoke zone on the built-in dial. They came out ever-so-slightly too smokey for my taste, but not at all bitter. Weren't fall-off-the-bone tender but did easly pull apart with some light tension. All were eaten by visitors, so must have been half OK lol.

I'm wondering if anyone has any suggestions for what I should try next? I have some cherry and hickory chunks already so anything with these woods included would be more economic for me.

You absolutely cannot go wrong with either a pork butt or pepper stout beef :) both are very forgiving to cook. The wood you have is suitable for smoking anything really, but it'll compliment pork really well

Any suggestions for where to locate a genuine pork butt?

I'm in the Chelmsford area of Essex

Supermarkets only seem to have boneless shoulders.

If you ask for a bone in neck-end cut of shoulder a butcher should be able to provide :)

The one use is up the Broomfield road called hughes meats. Opposite the applegreen petrol station. Just ask for a bone in pork shoulder, he also does brisket and slabs of spares. to guarantee your meat order on a monday and they'll get it in for thursday.

Yeah, that confused me for a bit, their beef short ribs are great. Just tell them you want them whole or they'll cut them into jacobs ladders.
