What's the Longest Smoke You've Done?

Postby Stewpot » 30 Jul 2014, 15:19

Hi All,

So....What's the longest smoke you've done and was it worth it?

Mine was my second smoke 2 weeks ago, Pork ribs for 8 hours. I'm not sure if they needed that long but they were, according to the Kids, 'fall apart delicious'.

Just an afternoon thought that's all.

Cheers

Pork butt, 12-13 hours, totally worth it :D And cold smoke-wise, I smoked bacon for 24 hours once

Probably in the 12 to 14 hour range for a large brisket.

14 hours for a massive shoulder, it was good but never again... turbo big butts for me now, same with brisket.

My first ever pork shoulder which was a whopper from the butchers took 16hrs to hit an internal temp of 200f.

First pork shoulder took me about 20 hours. I'd been using the thermometer on the lid of my BBQ as a guide (though now have a Maverick thermometer and know the lid thermometer runs at least 50F too high) and pretty terrible lumpwood which kept burning out quickly. Took the shoulder off the smoker after about 12hrs, it hadn't even hit 150F at that point, and put it in the oven for another 8 hours until it finally hit 200F internal temp. Ended up sleeping on the couch and waking up every hour to check the temperature, as didn't want to overcook it after sinking so much of my time into it. Never again, though it was still the most tender pulled pork I've managed.

Should say, it was also a whopper of a shoulder from the butchers, with lots of bones that I don't think I should have had.

I though bone in neck end shoulder was the best for pulled pork?

I think that's true. I got bone in neck end plus some spine and maybe a rib or two from memory. Was a bit daunting and confusing for a first-time.
