To smoke Ribs flat or hanging?

Hi,

First proper post so here goes.

I have a large rack of pork ribs with lots of meat on, its weighing in at 5kg's.

My question is: Because of the size should I lay the rack flat on the shelf or hang it from the fish hooks?

Oh I'm using a ProQ Frontier with 3 sections, so loads of room to hang the ribs.

Personally id lay then flat, from experience of hanging ribs on end cooks quicker than the other and you have to them around mid cook, not so easy when they are hot. Also laying them flat means you can foil them if you want to speed up the cooking or get them super tender.

You need to lay them flat, at 5kg you are talking a whole belly and the last thing you want is the ribs to fall and burn.

The more I thought about it the more I realised that hanging it would never work. It was a massive chunk of meat that simply would have pulled itself apart.

In the end I cut it in half. One half covered in Stokes BBQ sauce and the other with Barts New York Steak rub and laid it flat on two shelves.

Stupidly I only took one photo at the start of the smoke Image

Smoked it with apple and Hickory, after 8 hours it was 'fall apart' delicious :)

Just need ideas on what to smoke next weekend now.
