Christmas Turkey

A little late to post but just love when people put p pics of their cooks so here is the Christmas turkey with some stuffins (stuffing wrapped in bacon and done in the shape of muffins) where I cooked at far higher temps than I have ever done previously (~325f) and actually found keeping the temp so high quite a challenge.

I set a tray underneath with water, wine, veg, off-cuts and gizzards to catch the drippings and made some awesome gravy as well.

Juicy meat and tasted awesome - may have to try this again without waiting a year till next Christmas;

Looks sweet Conor, nice one! I've never done turkey on the smoker, largely because I can't get it right in the oven, so I figure one step at a time!

Did you manage to get any kind of smoke ring on it?

I was conscious of not spraying or adding any water to the cook so that I could control them temp and also wanted crispy skin (which I managed).
