Big weekend cook

Got a 5.2Kg pork shoulder, 2.3 Kg tenderloin and two large chickens for a feast tomorrow and should be fun with all the expected rain.

I'll post pics as i go.

Meat went on at 21:30 (injected it last night and added rub at 8am)

2 hours in at 250f;

Pork Shoulder this morning being wrapped after 10 hours on the WSM;

It all got eaten a bit quickly so I don't have any "final" pics but it was workth the effort :)

looking good! Is that a clay saucer wrapped in foil? if so turn it upside down, it you have it the right way up (ie bowl opening facing up) they have a tendency to crack.

Nice, I got a big cook going on today, 2x 4kg pork shoulders, 1 x 6kg brisket and then doing a tonne of abts + mac n cheese and some bbq beans. Gonna be epic!

It is actually the ash collector from under the WSM wrapped in foil. Would a clay saucer work any better?

That could be a good laugh actually, why the hell not eh?

I'm really hoping I haven't f*cked this brisket.. bbq been running a lot hotter than it should have been! I made a good schoolboy error of the bbq probe touching the meat and reading that temp rather than the grill temp! :S
