Cooking time help

Ok so I've got a all day BBQ piss up happening tomorrow and have got a 4.5-5kg brisket and 3.2kg butt from elsco ( really happy with quality) and 8 racks of baby backs from Costco, I've also got the normal stuff like burgers,sausages, wings and kebabs, I would like the good stuff to be ready for about 5/6ish. I'm ok with the ribs and pork but this brisket is already worrying me :shock: going on the average cook time it could be between 10-12hrs not really confident on leaving it overnight has I've only done a couple of cooks on the new GMG so was thinking about getting up about 4.30am and putting it on then

What do you think guys? Any advice would be greatly appreciated

I'm guessing you had an early start?

The party was great, brisket was on a 5am butt about 7am, unfortunately I've only got some before photos as the party got a bit hectic and the rum started flowing :D

Do you have any pictures of how the brisket turned out? How much was the packer cut?

Sadly no pics of food as the alcohol had taken over :oops: got the meat from ELSCO

Really pleased with the brisket, but the butt had a massive layer of fat and rind which when I removed nearly weighed a kilo but the taste of both meats was excellent, would definelitly use them again

I dont know what everyone else thinks but that does seem pretty expensive to me

£26 for a 4kg pork butt
£49 for a 6kg brisket

I suppose these are london prices?

Yeah I agree they are on the pricey side but haven't found any butcher near me yet that can do a whole brisket, i can get large pieces of flat from Costco but wanted to try the whole thing, as for the butt I can get really nice shoulders from my local butchers so I'm not to worried about using elsco for them

Fwiw I saw a 4.7kg bone in shoulder at my butcher the other day for £14.90

Did the brisket turn out OK Dave? I've only ever done flat before too and would like to try some brisket with a point. I've always found mine a little dry.
