memphis ribs, and bbq beans

ive decided to have a crack at some ribs today , not sure how im doing them uncovered/covered , ill see how it goes

ribs will be smoked over some hickory

the rub

2 tablespoons paprika
1 tablespoon black pepper
1 tablespoon dark brown sugar
1-1/2 teaspoons salt
1-1/2 teaspoons celery salt
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon cumin
1/4 teaspoon cayenne pepper

ribs prepared last night

the ribs

the beans recipe

100 g caster sugar
50 g runny honey
50 ml soy sauce
50 ml white wine vinegar
100 g tomato ketchup
50 g English mustard
tabasco, to taste
Worcestershire sauce, to taste
pinch cayenne pepper
1 pinch smoked paprika
250 g cooked haricot beans

Looks good. Silly question.., do you just place the beans in the pan on a shelf? How long do they take to cook?

heres how to make the beans

For the beans: in a saucepan, caramelize the caster sugar and honey together. Add the soy sauce and vinegar to stop the cooking, then add the ketchup and mustard and season with Tabasco, Worcestershire sauce, cayenne, paprika, salt and pepper.

Add the beans and heat gently for 15 minutes, until the mixture is bubbling. Taste and adjust the seasonings to suit.

Making me Hungry, looks good , how did the ribs turn out? I used the 3 2 1 method for spares which worked very well.

Well I managed to get a quick pick of a few ribs and bbq beans before they all disappeared I'll post a pic later

3 hours smoking at 115c' 2 hours foiled with a dash of apple juice, 1 hour naked. (Ribs) last 15 mins I like to add a BBQ sauce, sweet baby rays. Take a look at amazingribs.com

Forgot to say Rib 'n' Beans look good. Beans are my fav side. Are they baby backs?

Yes mate babybacks , I'll be having a look a amazing ribs ,

I did mine 2hrs smoking at 280 , then wrapped with a good mop for about another 1 1/2 hours , and they were fine , I going to have a go at that 3 2 1 next week
