MUTTON SHOULDER HELP

Postby SmokingO » 20 Jun 2014, 20:32

Have got a mutton shoulder and am smoking it on sunday, having never done this before does anyone have any suggestions for a rub / marinade or a flavour profile that will go with mutton. Dont know if lamb favourites of lemon garlic rosemary will cope with mutton or will a more vinegary / sugary / salty / spicy marinade / rub be the way forward ?? :?:

My go to Mutton rub is spicier as you have a rich and more powerfully flavoured meat with mutton rather than looking for acids to cut through the fattier lamb.

Zest of five preserved lemons 50g
4 tsp Sweet Paprika
1 ½ tsp Sweet Smoked Paprika
1 ½ tsp Cayenne pepper
4 tsp crushed ancho/chipotle pepper flakes
9 cloves crushed garlic
4 tsp toasted whole cumin seed
3 tsp toasted whole fennel seed
1 tsp caster sugar
fine sea salt

This is a good run from Jamie Oliver, the addition of the Harissa works really well
