I have no MSG or disodium 5-ribonucleotide in my cupboard
Seasoning salt is salt, MSG, garlic, paprika and a few other spices. Predominantly salt and MSG. Pretty much everyone has some MSG lurking in their cupboard, they just don't realise it! D5R is a commercial flavour enhancer that I've never seen in the shops and am curious about trying.
MSG is often demonised but it's no more unhealthy than normal salt - that is, in excess it is of course a very, very bad thing but used in moderation it is indispensible and perfectly safe
I have been pondering recently whether the low n slow smoking process, particularly with pork, produces natural glutamic salts, because I never use MSG in pork shoulder rubs but it has that unmistakable, unctuous, highly addictive umami moreishness I associate with MSG. Any chemists out there able to shed light on this theory?
