ProQ Amigo

Postby Smokey T » 02 May 2014, 23:07

Hi there, new to smoking so i got a ProQ Amigo smoker as recommended. It looks like i don't have enough room for wood chunks but i have the JD wood chips and a ProQ oak chips, everywhere i read says put in tin foil or a smoke tin. Is it me being stupid but why cant i just put it on the coals once they turn white?? They would burn slow anyway unless its just for making it burn slower?? Please help me out as i want to get my first cook perfect (OCD when it comes to cooking)

Hi,
Simply a case of getting them to burn slower and apply smoke over a longer period, risk of putting chips straight onto hot coals is they catch fire and burn very quickly, then most of the smoke goes straight out of your top vent, foiling them means the ones in the middle don't burn till much later.

Hope this helps.

Cheers

PS need to work on the OCD the only predictable thing about bbqq is it is unpredictable!

I'd recommend just using a foil packet - it's much easier to throw another one in once the smoke has stopped, rather than remove a red hot tin, top it up then put it back on the fire
