Foil Question - Holes

I currently do all my slow cooking in the oven, im saving up for a smokey mountain/similar

ive got a question about foil, ive recently cooked both a brisket and pork shoulder, and both times had issues with foil

with the brisket, i used bacofoil to cover my oven tray, i rubbed it the night before, and in the morning when i came to put it in the oven, i had 3 small holes in my foil, so i had to wrap a new sheet over it

with the shoulder i did yesterday, i was using Asda's own foil, when i removed that from the oven, id got a 10p sized hole in the foil which had kind of burned onto a section of the meat, i obviously removed and binned that section of the meat

im wondering whats happening to the foil ?.......i know when using a smoker you wrap your meat after getting your bark, but why am i getting holes in my foil ?

What is your oven tray made of?
I read somewhere that Aly foil can have a nasty reaction with certain metal under heat which causes it to melt/ weld to these metals.
Someone more savvy can probably explain better.
Use a disposable tray and cover with foil.

not sure but both times the holes were on the top, possibly where it had touched the meat inside

Touching the meat with the foil shouldn't cause it to melt.
I think it is reacting with the metal your oven tray is made out of causing the foil to melt.
When you foil meat to put in the smoker the meat is touching the foil all over.

but where it touches the tray ive not had any issues ?

I think the problem you're having here is to do with the thickness of your foil. Even when buying expensive foil from the supermarkets doesn't mean it will be any good sadly.

Most of the competition teams all use extra thick foil from costco or booker and even when double wrapping you'll still get tears in the foil sometimes.

well i was in the supermarket last night and i picked up a few packets of foil, they all said that salty or acidic food can cause holes in the foil, now pretty much all rubs are salty so im guessing thats my problem

ill definitely look into better foil though for the future, cheers
