It's a really good article, read it the day it was revised, I tend to forget that not everyone knows about Meathead and don't think to put links up for these little gems. Science and food what could be better ;)

Thanks for posting that link. I had thought the idea of foiling was overstated; I never foil ribs and only foil butts after taking them out of the smoker at 190F internal and then holding for about 2-3 hours in an insulated cooler. Stuff I learn from the basic tips on the virtual weber site. So foiling during the smoking process seemed counterproductive to getting smoke favorite and bark. Reading the article, I think it's time I see for myself what foiling will do.
