Pork ribs - belly okay?

Postby ColinG » 29 Mar 2014, 16:53

I spoke to my butcher today about ribs in preparation for my first slow cook. I explained what I was doing and he said I would need some meaty ribs, he recommended from the belly. Any thoughts as to their suitability?

Just be really clear with your butcher that you want a rack of bones (pics on my phone have helped in the past) as I have bought "belly ribs" in the past and ended up with a few small bones and a lot of cartilage from the breast section..
