Is it all sealed up with gasket sealant?
If the metal plate in the cooker is thin, you could use a welders jacket to insulate it to keep the temps up?
What temps are you getting at the box side and the exhaust side?

Thermo Pro TP 12.
Both high and low temp warnings, timer mode and temperature mode. Modes can be used together. 2 probes - 1 for meat and 1 for grill temp. Works perfectly for me!
