Is it all sealed up with gasket sealant?

If the metal plate in the cooker is thin, you could use a welders jacket to insulate it to keep the temps up?

What temps are you getting at the box side and the exhaust side?

Thermo Pro TP 12.

Both high and low temp warnings, timer mode and temperature mode. Modes can be used together. 2 probes - 1 for meat and 1 for grill temp. Works perfectly for me! :D

It didn't go too bad at all............ribs were not quite falling apart but at the time I was only going off temps on the nasty lid thermometer, so probably at the rack the temps were a little low - got a maverick type thermometer on order now. Also will try to ...

Just thought I'd say hi, I've been BBQ'ing for a while now with gas but decided to get an off-set smoker to try proper low and slow 8-) .
