Hi,
Is there a lifespan for when smoking woods and charcoal should be used by? I bought some apple wood, cherry woods over a year ago and not had the chance to use it all. I presume they would still be good to use. I also bought some BIG K charcoal over a year ago and still have a couple of bags ...

Hi,
I smoked a leg of lamb at the weekend after following a recipe from the amazing ribs website http://amazingribs.com/recipes/lamb/leg_of_lamb.html
Luckily, the lamb was cooked perfectly for me however I'd like to try this with different rubs.

My best success uses the 8:3:1:1 ratio mix. For example, 1 cup brown sugar, 1/3 cup of Kosher salt, 2 tablespoons of chili powder/paprika mix, and 2 tablespoons spice combination.
I like using Chinese five spice, garlic powder, onion powder, and thyme for my spice combination.

Yeah, all rubs I've made are home made...ive just followed the recipe.
