lamb shoulder

looking to try my hand at smoking a lamb shoulder, any tips or advice appreciated

Just about to pull some lamb from the smoker, been going since 1a.m. 222f for about 10 and a half hours ish. Used hickory. I go for a temp of 204f for pulled lamb served with fresh mint bbq sauce. Depends how done you like your lamb I suppose.

I have cooked this a few ways but like lamb cooked in a moroccan sytle, you can either butterfly the lamb (I do this) or cook whole. Mix the below and rub over meat, leave overnight in fridge

50g butter, melted
3 tbsp olive oil
2 tsp each ground cumin, coriander and praprika
1 tbsp thyme leaves
2 garlic cloves, crushed
juice 1 lemon (you can also add zest if you want)
1 tsp harissa

Sear lamb over direct heat to give it some colour then cook indirectly until ready. Serve with a yoghurt dressing (mix some Harissa into greek yoghurt and add some chopped corriander leaves)

Gents thanks for the tips, are you using a shoulder or a leg, like the Moroccan idea have done this style on a spit, well tasty.

I've smoked one shoulder before and it took until 90c internal until it was pullable.

Absolutely delicious Moroccan style with some cous cous and hummus.

In a brioche with mint bbq sauce, extra mature cheddar, beef tomato, chipotle mayo and topped off with crispy fried onions. would of had slaw added, but I haven't made it yet....

you are doing some nice things with the meat very impressed :D you should do it for a living LOL!!!!

I did a shoulder on the smoker and now I won't cook a lamb joint any other way!

Lamb shoulder is most good and nourishing, I have done it several ways, stabbed all over with bits of garlic and rosemary shoved into the orifi.

I have also covered it the night before in curry paste lemon juice and yoghurt and then had pulled curried lamb with an pilau rice

Frankly long and lo = unctuous and lambadamnadingdong..........
