Hello from sunny Manchester

I'm a long admirer of this forum and I've decided to join in the fun. I'm looking forward to contributing and learning new things.

I'm a keen Griller looking to expand my cooking skills. Being a British Jamaican, my speciality is Jamaican Jerk which I've perfected over the last 4 years.

2014 is my year of grilling the flavours of the world which I'm going to blog about. I've already started with my own Jerk marinade with Lamb Mechoui from Morocco the next on the menu.

Any suggestions on marinades, sauces and rubs from around the world would be of great help

Hi and welcome from across the pennines!

I will offer my basic pork rub recipe but it will look so pale in comparison to the flavour packed spices of jerk chicken or Moroccan spice! I tend to go with a sweet paprika base, add salt, pepper, cumin, onion and garlic powders, then spices, heat and / or sugar to taste depending on what I'm cooking and who it's for. If I'm cooking beef I tend to go for salt and pepper, keep it simple.

Are you looking to get into low and slow, what with mechoui being on the menu? What are you planning to cook in / on?

Hi Rob

I'm looking to experiment with different cooking methods, flavours and meats this year.

I'm a balcony griller with a decent sized kettle bbq with attachments.

Hopefully we get some good weather again this year.

A balcony eh? Presume that means you have some shelter at least!

A big kettle will do admirable low n slow barbecue as long as you tend to it. Eet smakelijk!
