Morning all, hope you all had a lovely weekend of cooking?
I attempted some more ribs, and think I finally have it nailed. Beautifully tender, great flavour and a nice smoke ring too! I was a very happy chap!
Cooked 2 hours over mesquite wood chips, then 2 hours foiled with honey, more dry rub, worcestershire sauce, apple cider and hot sauce, then another 1/2 hour without foil whilst I let the bbq sauce glaze set.
I'm hungry again just thinking about it!

Oh, those look good. After my surprise at how well my pulled pork turned out at the weekend I'm already thinking about a nice rack of ribs or 2 for next weekend. I think you have just made my mind up for me

Thanks guys

much appreciated! Haha they're the "meaty ribs" from Makro, really nice quality actually super impressed, although still quite pricey at about £9/rack. I'm hoping my brother in law can source me some from his catering butcher for a bit cheaper

I'd love a trip to Smithfield, but it's so far away and at such a ridiculous hour!

I quite often work rediculous hours in London repairing 'puters' and often not that far from smithfields...

I can recommend the East London Steak Company if you can't get to a decent butcher.
