Weekend Rib Cook

Morning all, hope you all had a lovely weekend of cooking?

I attempted some more ribs, and think I finally have it nailed. Beautifully tender, great flavour and a nice smoke ring too! I was a very happy chap!

Cooked 2 hours over mesquite wood chips, then 2 hours foiled with honey, more dry rub, worcestershire sauce, apple cider and hot sauce, then another 1/2 hour without foil whilst I let the bbq sauce glaze set.

I'm hungry again just thinking about it! :)

Oh, those look good. After my surprise at how well my pulled pork turned out at the weekend I'm already thinking about a nice rack of ribs or 2 for next weekend. I think you have just made my mind up for me :lol:

Thanks guys :) much appreciated! Haha they're the "meaty ribs" from Makro, really nice quality actually super impressed, although still quite pricey at about £9/rack. I'm hoping my brother in law can source me some from his catering butcher for a bit cheaper :D

Macros is out of my grasp, i think i'll plan a trip to Smithfield and see what's available there..

I quite often work rediculous hours in London repairing 'puters' and often not that far from smithfields...

I can recommend the East London Steak Company if you can't get to a decent butcher.
