first summer time cook

alright, I might be pushing it but it was the least moany way I could say that I was up at 5am (or 4am in "real time") to get these baby backs going. I found these baby back ribs in Morrisons for about £2 a rack so grabbed 4 of them.

Got the WSM up and running with the PartyQ (stil trying to get this working for me) and am trying a few options - just S&P on one rack, a BBQ rub on another and the third has a lot more rub and will be based in BBQ sauce for the final hour.

They worked out really well and the S&P were lovely (makes me wonder why I have been trying out all of these different rubs for so long). Used pecan and apple wood chucks for this by the way.

Found a really tasty Maple and Chipotle BBQ sauce for the "wet" ribs - pic below of the baste;

Got a chicken and some spare ribs for tomorrow so will try the 3-2-1 method and see what those results are like.
