Xmas Turkey and Beef

I hope everyone had a great christmas whatever you were doing.

It's been a bit quite on here for the last couple of days so i thought i'd share some pic's of the turkey and beef that i cooked for Christmas dinner.

This year i decided to inject my Turkey, i was originally thinking of pealing the skin back from the crown but couldn't get it to sepersate so i injected through the skin which worked out great. Injecting my turkey will be my prefered methood moving forward.

I also cooked a rib of beef for a bit of a change. I cooked it in a smoker and then finished over direct heat of the grill.

By far the best turkey i've had, lovley and moist, even the left overs were stil moist. This will deffinatly be my method for cooking turkey from now on. I'd also put my gravy in the bottom layer of the smoker which was good as i got a nice hint of smokey flavour in it as awell.

The beef was great as well, managed to still get a good crust by grilling the meat after cooking to my target temp' without over cooking the the beef. Will definatly be doing this again.

Hi Ed what timings did you have for the meats and what weight were they?
