Got me a weber!!

I was just at a friends house, and I was telling him about my Christmas BBQ last year and how I was slowly saving up for a weber to do pulled pork for this years Christmas party, when he took me out to his garage and gave me a weber compact that's in mint condition!!

What a great guy, but my question is this: can you slow cook on the weber compact? I know your not getting as much room, so things like beer butt chicken are out, but was just wondering what you can do?

Any help would be greatly appreciated.

Welcome. In short yes you can. You bank the coals on one side and put the meat on the other, if you can get something to act as a heatshield then it will work even better, think bent steel, fire bricks, old baking tray etc...

I have ended up with half a dozen of these Weber briquette holders. They are great for managing the fire in smaller BBQs.

I have a pair of them but refuse to pay the price for the "genuine" foil containers. I buy in store tray bake pans, (6 for £2.50) slit the sides so they slide inside one another so they fit whatever size meat I'm cooking. Once the size is right a couple of staples in the side holds it perfectly, add a bacofoil liner (other makes of foil ARE available ;) ) for longer life and Robert becomes a close relative.
