I used cayenne, mace, white pepper and garlic powder. They are fine without the skins, the initial heat from poaching in the skins almost seals the outer. I just warmed them up in a bath then grilled briefly for a bit of colour. You can just as easily do them with collagen or natural casings but a mate of mine sent me some of the removable skins from the states - it's hard to describe but the black stripe along them is almost like the peel away section on the cellophane around a packet of fags which make it easy to remove them.
