Truth be told I've never bought a whole brisket from them, but I've asked about it and they can do them with a bit of notice

Tried a bit of skirt Saturday. After 10 and a half hours it still wasn't proper tender. Was cooking low at 115 C but it was a very small bit. The shoulder didn't pull either. About another hour I reckon. Took both to over 95C still but no good.
