Ben, unlike me this kind of fatty is delicious, have a look on here Steve Hayes did what looked like a magnificent breakfast fatty, and the reports were that it tasted as good as it looked. There are loads of clips on youtube on how to build one, but if you follow Tiny's simple guide you can't go wrong.

If I'm catering for a crowd I much prefer to do fatties than faff about with grilling sausages

OH MY GOD
that sounds unreal!! Im gonna have to try me some of them.
Im wondering as a vairation could you use mince beef or chicken in replacement of the pork? shame im stuck at work till 7. i might have to bring a smoker to work and do it out the fire escape lol
im gonna try it soon and definately post about it. im thinking action shots of me scoffing it back!!

Think of it as a giant scotch-egg, without the egg (but you can fill it with anything you like even egg). My last one had cooked garlic mushrooms, cooked diced ham & blackpudding. If you use mince you end up with meatloaf and there is nothing whatsoever with a good meatloaf.
If you want a quick & easy to do WOW factor for non BBQ enthusiasts, look up cupcake chicken on youtube or this link to kievs http://www.bbbqs.com/Forum/viewtopic.ph ... 867#p21867.
If you want to go traditional with the kievs, after the chicken has set-up on the bbq/smoker and you know it's going to hold its shape, roll in pre-cooked breadcrumbs** and let it finish on the smoker.
**Pre-cooked breadcrumbs. Cover a baking tray with stale breadcrumbs, add butter (flavoured if you like) cook in a medium to high oven stirring every now and again until the breadcrumbs have turned a golden brown, cool and use. I don't know how well these keep as I've never had a surplus.

i thought it would be quite like a scotch egg.. my mouth is dribbling dead bad now! All i have is a couple of yogurts and some crap cobs.. im gonna close my eyes and pretend its a fatty

Thought I'd post a couple of pictures of the ribs I cooked at the weekend. Did two new rubs, two new sauces to compare and see which I preferred. Tasting some of the ribs at Grillstock made me realise mine weren't that good! Both of these new racks were really tasty though! Didn't bother trimming much this time though as just wanted to test flavours.


Surprisingly enough, the racks were from Tesco, and at £4 each they were pretty good! Plenty of meat.
