I've purchased a rolled brisket in the past and it has been a flat, without the bone and no fat. (FAT IS FLAVOUR)

I think if you can get a brisket for £6.50-£8.50 you will be getting a good deal. I went to Smithfield’s market a couple of weeks ago and purchased a 10kg box of boneless skinless chicken breast and they worked out as £3.40 per kg, my butcher sells it for £8.50 per kg. At the end of the month when I go again, I will be looking at the Briskets, pork shoulders and chicken thighs.
I'll also post what price they are selling at.

I've never been to Smithfield, but would love to go. Can you elaborate on the logistics of it? I.e. Parking your car, and how to negotiate with the sellers etc.
When choosing a brisket - how much fat is the ideal amount? Maybe a 1 or 1.5 cm cap?

My first time at Smithfield’s was very good; they welcome the public and were very helpful.

I finish work about 01:00-04:00, so it is ideal for me to drive there. No congestion fee due to time and I just parked outside the market and ask one of the butchers weather it would it was ok, and he informed me that it was ok until 08:00. The outside parking did disappear very quickly, but the web site does say something about a car park.
The market do not sell until 03:00 but you can walk around from 24:00 to have a look and to spot what you would like to purchase. As for the price, if you can get it cheaper somewhere else, it not legal.

All were helpful, you hold the cash and they want it. As for different cuts of meat, I wasn’t looking for butts or briskets, but I will be next time. I'll take a diagram of a butt so I don't get punched in the face, as for brisket I will ask for a full brisket off the bone with fat left on.
