So Scott, how did the practice turkey turn out? What temp did you cook at?

Hi Jim,
I did it at about 320 and it turned out ok...apart from the slightly chewy skin, but I think that was because it was a cheap supermarket self-baster. Anyway it looked good so I entered it into a Maverick facebook competition and won one of their new dual probe thermometers :lol:

Scott, I have cooked quite a few turkeys in various smokers, from the WSM to the JR Oyler to stickburning offsets and on the FEC100. I don't really think it is possible to get a crispy skin. That is unless you deep fry the bird. It is not a big deal to me and most of my family, as no one eats the skin anyways. I did a butt and rib cook today on the FEC. It was -24C here this am when I started. Going down to -35C here tonight. At least it isn't snowing.

Well it is -13C here on a bright and sunny Christmas Eve morning. Just got 3 turkeys on the FEC and they should be done by 2pm. Hope everyone across the pond has a very Merry Christmas and Happy New Year. Just going to inject my ham and get it ready to put on at around 2 when the turkeys come off. Supper at 6, so the ham should be ready by then.

Well here is one of the turkeys just 1 hour into the cook. All I did to the turkey was rinse with cold water and pat dry. Then just as I was putting them on the cooker, I sprayed them real well with vegetable oil. I will spray every hour til they are done.

"Ex girlfriend"? Ugly thing wasn't she!! :mrgreen: BTW Scott, did you cook a bird for Christmas and if so how did it turn out? Did you cook anything for New Year celebration? Too darned cold here right now(-24C) so am trying some oven recipes to keep interested in cooking.
