I've got a 6kg brisket arriving on friday along with a nice big pork butt for my Birthday BBQ this weekend. Its going to be an early start for me on Saturday !

If it's to eat on Saturday I'd be starting on Friday

I was working backwards from lunch time and that may well be the case ! I know my hacienda kamado will maintain a nice stable temperature for a good 12-13 hours but it will be my first overnight cook. need to go and find the remote thermometer so i can at least check on it from bed!!

for that size brisket cooking at a steady 250 aiming for lunchtime (1pm) and allowing for a couple of hours resting which i would recommend. I would fire up at 8pm, put your meat on at 9. foil it at 3am. always better to have it cooked and well rested (will hold nicely for 4 hours) rather than people waiting for a couple of hours to finish. You cannot serve brisket until its cooked otherwise people will be eating rubber.
