I believe that cooking with the bone in will help conduct the heat through to the core of the shoulder. So that can affect cooking times.

Pork shoulder and pork belly are both really forgiving because of the fat content. I'm mad about both to be honest. Since there are normally only two of us for dinner I normally cook belly low and slow as it is more manageable for us than a shoulder. Having said that the size of my appetite seems to be directly proportional to cooking time. :D
