I have never tried the Costco bacon bits, not sure what they are like tbh.
I would have thought that they would have a high salt content as the shelf life seems to be very generous.
Interesting product though, any ideas when or where they may be mass produced for the Market place? Are your contacts uk or us based?

The high salt content in bacon is just down to the cure, not sure if lo salt would do the same job, but to be honest the quantities required for curing would make any product high in salt. Problem with a product like that launching over here is people this side of the pond are more aware of their food due to legislation, some of the stuff i have seen in Walmart scared the bejeezers out of me!
