Followed this recipe and used an iPhone app to convert US to UK measurements.
They went in the oven for about 20 minutes.
Amish Corn Bread Recipe
1 cup yellow cornmeal
1 cup flour
4 tbsp sugar
1 tsp salt
4 tsp baking powder
1 egg beaten
1 cup milk
2 tbsp shortening, melted (butter works just as good. unsalted if you add the salt separately).
preheat oven at 200 C
Mix the dry ingredients together in a large mixing bowl and create a well in the middle. Chuck in the egg, milk and melted lard/margarine and mix well. I just used a good ol' spoon.
Grease your cake/muffin tray and spoon mixture in. I left about 1/2cm gap in each muffin holder to allow for them to rise a little.
I could not find any supermarkets that sold cornmeal but my local indian spice and food shop had it in stock! It comes in fine and coarse bags - I used fine.
EDIT> My local Tesco Extra has started to stock bags of Cornmeal in the west indian section.
