Hello from ScottishSmoker

Post by ScottishSmoker »

Hi All,

Just wanted to quickly introduce myself and at the same time ask for some advice and seasoned experience from all forum members on what BBQ or smoker to purchase.

My name is Bjorn and I always have been passionate about cooking outside. Having moved from a small terrace in Amsterdam to a big garden in a small village in Scotland I will finally be building my outdoor kitchen. Needless to say I want to put in a BBQ/smoker too :)

So here's my dilemma. As much as I want to smoke my dinner more often (can't wait for a tender smoked brisket or pork shoulder) I still want to be able to BBQ/broil/braai my chicken thighs and burgers. After looking around I believe eg. a horizontal drum smoker may limit my options as this is only meant for smoking not grilling? Or can I just put my charcoal under the grills in the main chamber???

I am tempted to buy eg. a Tennessee Charcoal Broiler Smoker or Char-griller Wrangler Charcoal Barbecue Smoker and create the smoke from a wee heap of coal and wood chips on one side of the BBQ on those occasions I do want to smoke something.

Looking forward to reading advice, sharing ideas and recipes and just having a chat with those who love outside cooking too!

Cheers,
Bjorn

If you want to grill more often than smoke then you can't go wrong with a decent size Weber kettle to be honest. However if your budget allows I can highly recommend a Kamado Joe ceramic oven, they literally do anything you want them to - smoke low and slow, pizza, roast, bake bread, grill burgers, sear steaks etc.
