What cut is the whole back bacon?

Postby essexsmoker » 20 Feb 2016, 16:35

Hi all,

I want to smoke back bacon and was wondering what the cut is called for the whole joint?

Is it just a bacon joint?

Looked around on the net and this forum but can't find the info I'm after.

Thanks.

Old Chap,
Back bacon comes from a pork loin and streaky comes from the belly, back when I was a lad you could buy "long back" which was an back rasher and streaky rasher in a oner, but then you could also buy collar, which you can still get from butchers, but I understand the mechanical pig butchering devices can deal with this so the collar ends up in Sausages.......I cannot corroborate any of this with links etc but this is where my wisdom is at having spent an unnatural amount of time reading pig related info on the interclacker......go well soldier,
timy

Hi Tiny, it was the name of the actual whole joint I'm after so that I know what to ask for. Some loin roast pictures I've seen don't have the belly bit on the end, just the eye of the loin.

Thanks.
