Horseradish marinade for beef

Good old British Beef, you can't beat it! Of course Brisket is the American BBQ favorite but recipes for any cut are welcome here.

Horseradish marinade for beef

I knocked this recipe together on Saturday for a piece of topside, worked a treat so I thought I'd share.

Marinade ingredients:
1/4 cup olive oil
1/4 cup worcestershire sauce
2 tbsp (heaped) hot horseradish sauce (would use fresh horseradish if I'd had any)
Leaves from 2 sprigs of fresh thyme
1 clove of garlic (minced)
A little water to dilute.

Once mixed I put the beef in a vac sealer bag along with the marinade then vac packed it and left overnight.

Half an hour before cooking, I removed the beef and rubbed with malden and cracked black pepper. Smoked it in the Traeger on smoke for 3 hours then cranked it up to finish off to medium rare.

It's a lovely marinade, the horseradish wasn't particularly strong but added a little extra dimension that was delicious.

YUMMIE - sounds like a good one to try - we have yet to do beef as we love pork, chicken and ribs so much :)

I'm all about the beef. Got to admit I don't tend to hit it with rubs other than s&p but I love the taste of smoke and cow.
