Getting the Bradley Digital fired up for a long night of butt action tonight. Barbecue tomorrow afternoon and then going to freeze some for a birthday party next weekend. Only got tonight to do this so a couple of red bulls should see me through.
3 packets of the 2 x shoulder halves from Costco. Great value for money - think I was £26.50 for the 3 packs and this should feed a fair few people.
Got them all rubbed up and resting. Gonna put them on around 11pm. Looks like it could be a mild night so will hopefully not affect the cook too much.
Hmm - I haven't put this amount of meat in there all at once before. Temps are struggling at the moment but slowly climbing. Anticipating a finish time of around 3pm.
Supposed to be set and forget but my Bradley is a temperamental piece of kit and I tend to check it a lot to make sure the smoker temp stays the same - it can fluctuate quite a lot when it's chilly outside.
I always put the Bradley on forgetting how much stress it causes me when I cook on it. However - onwards and upwards!
That sounds a little disappointing, nothing worse than something stressing you out, puts you off using it. Are there any fixes you can do to make it more stable? If it's not working out sure you could shift it on eBay and get something else?
Yeah I made the decision last week after looking at hundreds of YouTube videos - Bradley is getting the bung, and once we have moved into the new house, Big Green Egg is going to be the next purchase! It certainly looks incredible and really versatile.
Called myself a proud owner of the Bradley but nearly 13 hours on the meat is in the oven. Definitely not a proud owner today!
After 13 hours it's not going to get any more smoked anyway, after that point you won't lose anything putting it in the oven, as annoying as it is having to do it.
I can't speak highly enough of my BGE, I would definitely recommend a ceramic cooker to anyone. You should also consider the Kamado Joe, there are lots of people on here with them. In my personal opinion the final build quality is not as good but it's easily as versatile if not a little but more with the divide and conquer system, I made my own version but it will fit in the Egg and is available to buy from lots of places.
Pulled out the oven at 202f - foiled and wrapped in towels now. Its a little tougher than I'd like but it pulls well enough. Bark is actually not bad either and can taste the heat from the cayenne in it.

Yeah the BGE is definitely my next purchase - saw a video of the pizza stone attachment and I was sold!
We do Pizza at least once a month if not twice, so much better than frozen and way cheaper than dominos!! Just bought the deep dish pizza stone hoping to use it next weekend for the first time.
