What to ask butcher re brisket cut

I thought brisket was supposed to be a cheap cut of meat!

Would this be a good diagram to give them on how I'd like it trimmed?

That does seem a bit steep. Is that for a brisket pre-trimmed of excess fat, or does the £11/kg include all the fat?

To give you an idea - whole rolled Scottish brisket is 6.49/kg at Booker. Not sure how this comes though - never bought one.

That appears to be for trimmed and rolled, he's said I can order 2 of these and they'll trim it appropriately, I'll check

How does that come CyderPig? Is it 'rolled', and does it have all the fat, or is the excess fat removed?

I'm not sure what 'rolled' means - if one were to buy a whole rolled brisket, would you get the flat and the point?

What would one expect a flat and point to weigh together?

What would you normally pay for a brisket Eddie? Bit worried I'm going to get something not quite right, like last time!

The butcher can supply both rolled and cut, or the whole brisket, lately the briskets seem to be over trimmed, hardly any fat left on, the slaughter houses must have the healthy eating bug.

Is a rolled brisket just another term for a whole brisket with no bone?

The brisket comes off the steer in one big piece, this is then trimmed rolled and tied, then cut into smaller joints for sale.
Hence the term rolled, you can buy a joint cut the string and cook it flat if you want.

I've purchased a rolled brisket in the past and it has been a flat, without the bone and no fat. (FAT IS FLAVOUR)

I think if you can get a brisket for £6.50-£8.50 you will be getting a good deal. I went to Smithfield’s market a couple of weeks ago and purchased a 10kg box of boneless skinless chicken breast and they worked out as £3.40 per kg, my butcher sells it for £8.50 per kg. At the end of the month when I go again, I will be looking at the Briskets, pork shoulders and chicken thighs.
I'll also post what price they are selling at.
