slab of salmon

hi folks
hardly a recipe at all but this went down real nice yesterday.

Started with a slab of salmon around 8oz. gave this a good rub up with a mass of cracked black pepper, smoked at 180 for around 40 mins offset with mesquite.

for the last 10 wheeled it across to the coals on its bit of foil which crisped tje slkin up, personally dont like the skin and this method allowed it to come away clean

Ate lovely with delicate but rich smoke flavour....

Wholw thing was a happy accident as Mrs tiny forgotmy piece of belly pork was in the little oven hiding when she fired it up for the kids lunch and knackered piggy....rescued him by 17 hours in a low oven,m so 2 meals of goodness so shouldnt complain!

Will try and upload picture of fish as tajen by Mrs T later......

Cheers
