All depends on your taste. For myself I'll smoke for the ribs for first two hours with apple, oak or peacan.

My cheapo temp gauge arrived today, as expected it under reads in a cup of boiling water lol

Will just have to take this into account when cooking things so when it says 200 on the gauge it's really more like 230

You may be able to calibrateb it. Is there a nut on the back?
