Ok i know this has nothing to do with low and slow cuts of meat but still a very interesting :ugeek: video showing some different cuts of pork that i'd never thought of and will be interested to try out.

Ed if you find a butcher willing to do it, ;) (Oh and let me know as well please). I notice there was an awful lot of "Trim" left for sausages :(

As for his speed, what do you expect when you pay him on Piece work ;)
