Sticky Chicken Fingers

With the trip to Memphis in May in the pipeline I have a great excuse to play with food rather than settle for my favourites, one of those is the quintessential hot wing!
I added two different base rubs to some wings that i had stretched, my audience (the kids) will eat anything that looks like a lollipop and as i was packing these with paper anything to get them tried is worth the effort!

On the left you will see my steak seasoning, this is heavy on the garlic, salt and pepper and on the right my normal sweet and heat chicken rub. I let them sit for about 20 mins before throwing on the grill. After about 10 mins i gave them the first soak in a bath made from Maple Syrup, homemade raspberry chilli jelly, sweet chilli sauce, some chipotle, tabasco and Franks.

After another 5 mins i brushed them again and let them cook to 190f, once off i brushed them again with the sticky mixture and let them rest. My goodness they were good! I thought that the sauce would over power the rub but that wasnt the case at all. Both were very different and the favourite turned out to be the one with the steak seasoning. Definitely worth doing again although i need more heat on my meat.

Yes please. I'll ask the missus to go run me one. Someone throw a few cooked chicken fingers in there while I'm in the tub?
