Spatchcocked Chicken

Cooked a spatchcocked chicken a couple of days ago, I mixed a couple of tablespoons of mayo with some chopped onion and added some sage and thyme, half of the mix went under the skin making sure to get round the thighs and drumsticks, the remaining mix was smeared over the outside. Indirect heat on the kettle for about 90 mins with a couple of good coatings of Italian dressing towards the end.

Turned out really moist and tasty.

Cabbage quarters slathered in Italian dressing and wrapped in foil, each quarter was further cut in half to get more of the dressing on, on the grill indirect for about 45 mins.

Turned out the best so far, think this will be my goto method for cooking cabbage on the kettle, just needed some bacon!!!
