Beef Short Ribs

This is a past cook that I wanted to share (and have posted elsewhere).

Did some beef ribs on my One Touch Silver also using the trivet to add to the indirect.

It was my first ever attempt at beef ribs. Trimmed off most of the fat cap.

One with a Dalmatian rub (just salt and pepper) and one with Mad Hunky General Purpose rub.

On to the Weber using the snake method with some cherry and hickory wood. Also used a foil pan with some water for moisture.

Getting there, the end bone actually fell out of the plain one when I picked it up.

Plain one, added some Rendezvous dry rub after cooking. Really like the Rendezvous rub!

MH GP rubbed. Bark was amazing.

Those look awesome! I have never cooked these before, do they normally shrink that much? I am just wondering what to expect when I do cook them.

Thanks, they were fantastic. I was dead chuffed with myself actually. :)

I was pretty surprised with how much they shrank actually. I think it depends on the amount of fat in them as that is what renders down.

You can also see how much deeper the smoke ring penetrated on the ones without a rub.

Haven't done them again but really looking forward to it.

It's also the connective tissue and colegen that renders down that's what gives it that sticky mouth feel that tastes sooooooooooooooo good :D
