Totally forgot to get something for the grill for Saturday night, so last minute I nipped out to the local farm shop. The butcher there is actually very good, albeit premium-priced, and had some fresh buffalo meat. He cut me these two sirloins:
They were very tasty indeed - more beefy than normal beef, if that makes sense. But not in an unpleasant way. Would definitely have them again if I can find them cheaper than the solid gold price I bought these at
Treated them like I would normal steaks, just salt & pepper & then a quick grill (1.5 minutes each side) at around 500-600F on the Kamado. Except that I over-cooked them a little to medium rather than the medium-rare we prefer. Doh!
