What to ask for when buying Brisket

Good old British Beef, you can't beat it! Of course Brisket is the American BBQ favorite but recipes for any cut are welcome here.

What to ask for when buying Brisket

Postby karrion » 27 Dec 2011, 23:11

Hi guys.. Sorry if this is the wrong forum..

After a single season BBQing I tried brisket a couple of times and have always been confused by exactly what to ask for when at the counter of the butchers. I ask for "Brisket" and I always end up with a de-boned & rolled thin bit of rubbish!

Can someone advise me exactly what cut I should be asking for to get those frikkin huge American-style briskets I see on the BBQ shows? (I did ask for this in my local butcher and they looked at me like I was from another planet)

Also.. Anyone recommend a good farm shop / butchers in or around the Reading area.

Cheers guys!

Hi,

If you speak to Jennings in the precinct in Caversham, tell them you want a brisket like Steve has for BBQing, they'll sort you out. Speak to Michael and you might need to give him a week's notice but he will get you a good one.
