Hi Guys
New to the forum so thought I'd say hi!
I've been BBQ'ing for a few years but recently converted to a cheap offset barrel smoker which I've modified over the last few months, which now cooks pretty well. Tackled my first pork shoulder (3kg) last weekend which went smoothly apart from hitting a 4 hour stall at 169f after 5hrs (was 165f after 9hrs!) but made a great midnight snack when it finally hit 195f after 11hrs - glad I had plenty of beer in the fridge!
Looking forward to reading the forums for some tips and advice!
