Boone been ordered and should arrive on Thursday

am hoping to try doing smoked pekin duck at the weekend - though lots of prep required (inflating the duck with a pump to loosen the skin, immersing it in hot water and then glazing for a couple of days before smoking.

Now cooking lambs breast (rubbed with salt, spices, garlic, rosemary and mustard) filled with a merguez style minced beef (with harissa, paprika, fennel, cummin, fresh coriander, cinnamon).

Is that an optional drip tray or the new standard? Mine is a flat sheet of heavy meatal

its the new standard stainless steel 2 part drip tray

the holes can aligned for maximum smoking or blocked off for grilling

Other way round old lad, closed when smoking to get a more even heat, open when grilling to let roaring jets of hot smoke through.....Cheers

Think I will have to buy the thermal cover as we are getting through pellets at a high rate using the DB in these colder months.
