There was not all that much charcoal in there. These sausages seemed to be directly grilled, but not with intensity. Sort of a low-and-slow direct grilling. They were delicious though. They sold "red" and "white" sausages. From what I can determine just different types of Bratwurst. The white were the usual type, and the red were either Berliners, Rostwurst, or Thüringer. I should have asked.
